Vegetarians tend to have lower iron status than meat eaters. This does not mean non vegetarians are never anemic. Poor eating habits can cause problems.
But a well planned vegetarian diet can meet iron needs. But vegetarains sources provide the kind of iron which cannot be absorbed by the body properly. Even excessive fiber intake too can bind and hinder the iron absorption.
There are many ways to improve iron absorption and this can be done by including Vitamin C in the diet. Squeezing lemon onto greens and salads can increase the absorption.
Having a glass of tomato juice as tomatoes are a good source of Vitamin C, can be had with any meal.
Germination or sprouting and fermentation too increase the iron content in food.
Foods cooked in iron vessels will have increased iron content.
Tea and coffee too seem to interfere with iron absorption. Hence keep them at minimum.
Hence vegetarians can keep iron deficiency away.
